叫化鸡:[jiào huà jī]1.beggars' chicken叫化鸡的由来又称黄泥煨鸡,用嫩母鸡为主料用独特的方法制作而成,既是江苏常熟的传统名菜,也是闻名四海的佳肴。曾被评为江苏省名特食品。相传在明末清初时期,江苏常熟的虞山一带有个叫化子,平时到处行乞,讨要一些残菜剩饭聊以充饥,有时一天难以讨到一碗剩饭,只得忍饥挨饿。这一天,他运气很不错,除要到一些充饥的饭菜外,还遇到了一位好心肠的老太太,送给他一只老母鸡,他高兴得手舞足蹈。但他是个叫化子,除了手中的破碗,别无所有,怎样才能把这只鸡做熟呢?他想了好久,也没有想出个好办法来。突然,他灵机一动,计上心来。他就近找了一户人家,向主人借了一把刀,将鸡宰杀,除去内脏,到山上挖了些黄泥涂于鸡的表面,取来枯树枝叶点起火,将包好的鸡放在火堆中烧焖,待泥烧干,他估计鸡也熟了,就用棍子敲去泥壳,鸡毛也随泥脱落,顿时香气四溢,叫化子十分惊喜,遂抱起鸡狼吞虎咽地吃起来。正当叫化子吃得起劲时,明朝大学士钱牧斋散步路过此处,闻到鸡的香味,并老远看到叫化子吃鸡的情景,便差人前往打听叫化子是如何做出这样美味鸡的。差人打听了一番,并取了一小块鸡肉给钱牧斋,钱牧斋品尝后,觉得味道确实很不平常。回到家中,他令家厨按叫化子所说的方法制作,并在鸡肚子里加进肉丁、火腿、虾仁及香料等各种调味品,用荷叶包着,涂上黄泥,在火中烘烤,并取名“叫化子鸡”。有一天,江南名妓柳如是来到钱家,钱以叫化鸡款待,并问柳如是:“虞山风味如何?柳说:“味道好极了”,并说,“宁食终身虞山鸡,不吃一日松江鱼”。叫化鸡至今有300多年的历史。据说,最先经营叫化鸡的是常熟山景园酒家,他们在民间制法的基础上加以精致和完美,并将此菜改名为“黄泥煨鸡”,成为中国名菜之一,特别闻名于沪宁、沪杭地区。杭州著名的杭邦名菜“叫化鸡”也由此而来。现此菜在国内外享有很高的声誉,在日本常作为最珍贵的中国名菜用于宴会酒席。
